Serves 10 guests
Ingredients for the Clementine Cordial (produces 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
For the Drink (yields 850ml, serving 10)
400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Place the listed items inside a pot, bring to a light boil, mixing to dissolve. Then, remove from the burner and leave to cool fully. Decant into an sealable bottle, seal and store in the fridge, it will last for around one month.
Preparing the Batch Mix: Mix all the liquids in a sizeable container, let it rest for an hour, then strain preferably using cheesecloth, so it's fully clarified.
To serve: Measure 85ml of your cocktail base into a mixing glass containing ice, and agitate carefully for one minute to cool it down. Pour into a cold coupe glass or equivalent, decorate with a few cranberries adding the final touch using a light spray of the essential oil over the top.
